Tostadas



Adaptation from Everyday Food recipe

My Hubby and boys are good about eating veggies, but since this was a new thing I decided to add the hamburger, it was originally a vegetarian dish.

4 flour tortillas
3 small zucchini
8 mushrooms (I used white and Crimini)
1/2 pound ground beef
1/2 half onion chopped
1 tea olive oil
1 tea chipotle chili powder
Mexican cheese blend, cheddar, Monterrey jack, colby & mozzarella

In a hot skillet put the olive oil and onion when onion is starting to soften put in 1 tea of chipole chili powder continue to cook until onion is transparent then add beef and cook until browned.

Slice zucchini in 1/4" rounds cook on grill pan while beef is cooking. Dependant on pan but you might have to do this in batches. Then slice mushrooms and grill.

When everything is almost done warm tortillas in the bottom of a dry skillet on med-high heat until golden.

Then assemble and enjoy.

  2. Looks good. I would have added beans to keep it vegetarian. My husband however would LOVE your recipe. Hope you'll post the "big project" you mentioned in your email. Looking forward to it. Love your quilts.

  3. Thanks! I will post the project when I get it completed. All my other quilts have been child size and this is a bigger one.
