Chicken Noodle Soup

I know this is probably an old cliche' but it is my favorite soup. I am not taking about the stuff in the can I am talking about homemade everything from scratch soup. This is my version. It is simple but so good.

Chicken stock
10 quarts of water
1 whole chicken
1 cup carrots
1 cup celery
2 bay leaves
2 teaspoons kosher salt
1 teaspoon cracked black pepper

Bring to a boil and cook for 40 minutes. Turn off the stove and let sit until cool enough to handle chicken.

Pull out chicken and strain stock. Discard all solids. You will have extra you can put it in ziplock bags and put it in the freezer for later use.

Shred chicken put 1/2 in a Ziploc for later use.

Soup
10 cups stock
1 pound of chicken (about 1/2)
2 cups carrots peeled and cut into bite size pieces
1 cup celery cut into bite size pieces
8 ounces of pasta

Put everything except pasta into a large pot and bring to a boil for 20 minutes. Then add pasta and cook for another 8-10 min (depends on your pasta). Add some salt and pepper as needed and enjoy.
