Macaroni Salad


This is a simple and tasty pasta salad that is great for any backyard bbq or just as a great side dish for summer. I usually make enough for a couple days. It is one of those great things to pack in lunches.

1 pound of macaroni noodles- I used shells I ran out of the other
Mayonnaise about 1/2 cup to start
Mustard about 2 tablespoons or to taste
2 cups Sweet pickles chopped or sweet pickle relish
3 hard boiled eggs diced
Salt
Pepper

Boil pasta in salted water until done. Drain and add pickles, this helps the pasta to not stick together as it cools. When the pasta has cooled add the eggs, mayonnaise, and mustard. Give it a good stir. Most of this is to taste, if you want it more tangy then add some more mustard. If it is to dry then add some more mayonnaise. When it is ready put in the refrigerator to cool and serve with anything. It is also great all by itself.
