Berry Cobbler


My Aunt G lives not to far from me and called the other day to say she had raspberries and wanted to know if I wanted any....of course. So on Saturday evening I went over and picked a huge bowl of them. The only thing keeping me from eating them before I got home.....the 2 1/2 miles was knowing I was going out to dinner. So on Sunday I found myself with a huge bowl of raspberries plus some blueberries and marion berries I had picked up earlier in the week. I figured what the heck and I tried a new cobbler recipe. It is good. Though I like mine to be a bit more of a biscuit topping, but Hubby and Mom love it so that is really the important part, right.

Berry Cobbler
1 cup blueberries
1 cup marion berries
3 cups raspberries
2 tablespoons brown sugar
2 tablespoons sugar
Juice from 1 lemon
Zest from 1 lemon
1/2 teaspoon nutmeg
1/4 stick butter cut into small pieces

Mix together berries, lemon juice, zest, nutmeg, and sugars, pour into your baking dish then dot butter across the top.

Topping:
1 cup flour
1/2 teaspoon baking soda
pinch of kosher salt
6 tablespoons butter cut into pieces and chilled
6 tablespoons buttermilk
1 tablespoon vanilla

This part called for the food processor but I was lazy and my stand mixer worked just fine. Put in the dry ingredients then toss in the butter until it is in little clumps. Then add the buttermilk and vanilla. Mix until combined well and it has started to come together. Pour on top of the berries and spread out evenly. Sprinkle on 1 tablespoon of sugar and bake for 30 min at 375 degrees.

Serve warm with homemade vanilla icecream or whipcream. Enjoy.

  2. Thank you for the recipe! We love cobblers and this one looks so particularly delicious!! I also have raspberries (and strawberries), though they're a bit slow this year in the harvest, and wouldn't give enough for a cobbler or pie. Hope you're having a blessed week,Linda
