I have a thing for lemon. It is just one of those things that sounds great on a cool summer evening.
Lemon Bars
Adapted from Bakerella
Crust
1 1/2 sticks unsalted butter
1 3/4 cup flour
1 tablespoon lemon zest
2/3 cup powdered sugar
Filling
2 cups sugar
1/4 cup flour
1 teaspoon baking powder
2/3 cup lemon juice
2 tablespoons lemon zest
4 eggs
Preheat oven to 350 degrees. Grease and flour a 9 x 13 pan (or spray)
For the crust mix all ingredients in your mixer until it is crumbly then press into the pan. Bake for 20 minutes or until edges are starting to brown.
Mix the filling while crust is baking. In your mixer again mix in all ingredients, sometimes is works better to beat the eggs slightly before adding them.
When crust is done pour filling in and bake for another 25 minutes until it is set and beginning to color.
Set aside until completely cool then cut into pieces and sprinkle with powdered sugar. Refrigerate until ready to eat.
