Scones




I decided on scones for the teachers. I spent all Sunday morning baking and I have to say they were delicious. (Hubby and I taste tested) I made cinnamon, vanilla, lemon, and orange. The cinnamon were my favorite they tasted like cinnamon toast....I love cinnamon toast. Here is the recipe that I used.

Scones
Adapted from Joy of Cooking

1 3/4 cup flour
1/2 cup sugar
2 1/4 teaspoon baking powder
1/4 teaspoon kosher salt

1/4 cup butter (1/2 stick) cold cut into pieces

1/3 cup heavy cream
2 eggs

Combine all dry ingredients into bowl then cut in butter until crumbly. Then add cream and eggs and which ever flavoring that you prefer.


Orange
2 tablespoons orange zest
4 tablespoons orange juice

Lemon
2 tablespoons lemon zest
4 tablespoons lemon juice

Vanilla
1 tablespoon vanilla
this would also be good with vanilla beans but I was out

Cinnamon
2 teaspoons cinnamon

Mix until combined but don't over mix you don't want them to be tough. Lightly flour your counter and then turn out dough. Gently pat into 8" round and cut into 4 then each of those into 3. Apply an egg wash I used one egg beaten and 1/4 cup cream then sprinkle the top generously with sugar. I used vanilla sugar on the top of the vanilla scones.

Bake at 450 degrees for 12 minutes. Serve warm or at room temp.

For the teachers I made honey butter, whipped butter and strawberry jam to go with the scones. I hope they enjoyed them.

This was my first time making scones and I love them. They were so easy and so much better than anything I had before. I will be making them many more times and playing with the additions......
