Coq au Vin

I made Coq au Vin last night for dinner. It really didn't go over as well as I planned. They just didn't like it. I followed the recipe exactly and the chicken turned out a bit dry and really there weren't enough vegetables.

Hubby and I talked about it during dinner and I think if I changed things, used just broth instead of the wine, added more carrots and some potatoes then we might have something. That turns it into more of a stew and not really what it is, but it sounds good to me.

Oh well. That is why we are trying new things to find the things that we like and dislike. I have chicken left over so today will be chicken salad sandwiches for lunch.

If any one has a recipe that they love and would like to share that would be great.

  1. Sorry it didn't turn out well, but you're right, that's what trying new things is all about. I haven't been doing well with posting recipes, and I do have some that we really enjoy and will have to share them sometime. I used to have my Monday recipe of the week segment, but it's been too much to keep up with that right now.
