I promised awhile ago to show you one of my favorite ways to have chocolate chip cookies, they are wonderful on there own of course, but there is something so special about having your own skillet cookie with a big dollop of vanilla ice cream on top. It is just so wonderful.
The best part is, it is super simple all you do is take the cookie recipe and make a ball of cookie dough probably the equivalent of 2 or 3 cookies and then press slightly into a mini 4 1/2 inch cast iron skillet. Yes it is probably a dessert that you should share, but really you won't want to.
Mom's Chocolate Chip cookiesMakes about 2 dozen
1 stick unsalted butter
6 tablespoons sugar
6 tablespoons brown sugar
1 egg
1/2 teaspoon vanilla
1/4 teaspoon salt
1 1/2 cup flour
1/2 teaspoon baking soda
1 cup chocolate chips
1 tablespoon water (if needed).
Preheat oven to 350 degrees line two sheet pans with parchment or silpats
Cream butter and sugar, add in egg and vanilla when mixed well add in dry ingredients. Then add in chocolate chips. If the dough doesn't seem wet enough add in 1 teaspoon of water until it is as you like it. You won't need the full tablespoon. Use a medium scoop and bake for 10-12 minutes. Let sit for a few minutes then transfer to cooling rack.
