Banana Bread

My banana bread. It is the perfect breakfast as long as you aren't on a diet. I made one large loaf to give to my Dad and the other half I made into these cute little loaves. Are they not just darling. I tend to give away a lot of what I cook since it isn't low calorie, and I know that I always have a willing recipient in my Dad.

Banana Bread
Adapted from Betty Crocker

1 1/4 cups sugar
1 stick unsalted butter room temp
2 eggs
3 medium/large bananas very ripe mine were black
1/2 cup buttermilk*
2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 cups chopped pecans**

Preheat oven to 350 spray your baking pans of choice with baking spray or butter and flour

In a bowl mix all dry ingredients together and set aside. Cream butter and sugar in your mixer until light and fluffy, add the eggs one at a time until incorporated then add vanilla and bananas. When it is well mixed add the dry ingredients, when combined-don't over mix. Then add the nuts. Pour into pans and bake for about 1 hour maybe a little longer. If you make the mini loaves bake those for about 30-35 minutes and muffins will be about 25 minutes.

*If you don't have buttermilk you can make your own. Measure out 1/2 cup milk then add 2 tablespoons of lemon juice. Let sit for a few minutes.

**Pecans and hazelnuts are the only nuts that I like but if you like something better substitute that.
