Zucchini Bread


Hubby requested this the other day when I said I needed to make banana bread again. So I found my last package of frozen zucchini from last year and whipped this out this morning.

Zucchini Bread
Adapted from Betty Crocker

3 cups grated zucchini
1 2/3 cups sugar
2/3 cup unsalted butter
1 tablespoon vanilla
4 large eggs
3 cups flour
2 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon baking powder

preheat oven to 350 degrees. spray two loaf pans with baking spray or butter and flour.

Mix all dry ingredients in a bowl and set aside. In your mixer cream butter and sugar until light and fluffy, add eggs, vanilla and zucchini and mix until well incorporated. Then add dry ingredients. Scrape down bowl and when everything is mixed well divide between the two pans. Bake for 50 minutes or until toothpick comes out clean. I made 1/2 of mine into muffins bake those for about 25-30 minutes. When done put on a cooling rack on it's side then remove and let cool completely. Nothing cools completely at my house. Serve with some butter and it is delicious.

Raisins and nuts are a great addition to this add 1/2 cup of either one or both. Hubby doesn't like either so I don't put them in.
