Apple Skillet Cake


This recipe originated from Pioneer Woman. She is a wonderful cook, but there was just something missing for me. I made a few changes and I think we have a keeper.

Apple Skillet Cake
Adapted from Pioneer Woman

4 apples-peeled, cored, and cut into 8-10 pieces each
1 stick unsalted butter-if you have a smaller pan cut this down. Mine is large.
1/2 cup sugar
1/2 cup brown sugar

Cake:
1 stick butter
2/3 cup sugar
1 tablespoon vanilla
2 eggs
1/2 cup sour cream-I used fat free and it was fine
1 1/2 cups flour
1 1/2 teaspoon baking powder
1 teaspoon kosher salt
1 tablespoon cinnamon
1 apple-peeled, cored and diced

Preheat oven to 375 degrees

In a large cast iron skillet melt butter over low to med-low heat, when melted add sugars and stir, make sure sugar is covering the entire bottom of pan then add apples. Make them look nice you will see them later.

Mix flour, baking powder, salt, and cinnamon together in another bowl set aside.

In your mixer beat butter and sugar until light and fluffy. Add eggs and vanilla when they are incorporated add sour cream mix well. Add dry ingredients and mix until just coming together. Fold in apple slices. Spread gently over the apples. Put in the oven and bake for 25 min.

When done let sit for 5-10 min then turn out on dish. Serve warm with whipped cream or vanilla ice cream.
