Lemon Bars
I love lemon and these are both sweet and tart, the perfect balance of both.
Lemon Bars - adapted from Bakerella
Crust
1 1/2 sticks butter cold
1 3/4 cups flour
1 tablespoon lemon zest
2/3 cup powdered sugar
Preheat oven to 350 degrees
Put flour, lemon zest and sugar in a bowl and combine. Cut in butter with a pastry cutter until crumbly. Press into a greased and floured 9 x 13 pan. Bake for 20 minutes. Make the filling while the crust is baking.
Filling:
2 cups sugar
1/4 cup flour
1 teaspoon baking powder
2/3 cup lemon juice
2 tablespoons lemon zest
4 eggs
Combine in bowl and beat until well combined. When the crust is done pour on top then bake for another 20-25 minutes until set. Let cool then cut unto pieces and dust with powdered sugar. Refrigerate until ready to serve.
