Lemon Bars

I love lemon and these are both sweet and tart, the perfect balance of both.

Lemon Bars - adapted from Bakerella

1 1/2 sticks butter cold

1 3/4 cups flour

1 tablespoon lemon zest

2/3 cup powdered sugar

Preheat oven to 350 degrees

Put flour, lemon zest and sugar in a bowl and combine. Cut in butter with a pastry cutter until crumbly. Press into a greased and floured 9 x 13 pan. Bake  for 20 minutes. Make the filling while the crust is baking.

2 cups sugar

1/4 cup flour

1 teaspoon baking powder

2/3 cup lemon juice

2 tablespoons lemon zest

4 eggs

Combine in bowl and beat until well combined. When the crust is done pour on top then bake for another 20-25 minutes until set. Let cool then cut unto pieces and dust with powdered sugar. Refrigerate until ready to serve.

  1. Thanks for providing the link to your new site on your old one. I've always enjoyed your blog. Why did you change sites? This one looks nice as well.

The lemon bars look yummy. You know my thoughts on baking, since I don't do it often, but once in a while, I'll try something new. :)

  2. Linda~ I wanted something new and a fresh start. Wordpress has some advantages that Google didn't, it goes both ways though. Thank you for your friendship :)
