Salmon Roll

This is a recipe that my Mom shared with me years ago. It is one of my go to dishes when I need to bring something for an event. A lot of people are a bit sceptical until they try it, then you can't stop them. This is also great for a sandwich filling when you are tired of tuna or chicken.

Salmon Roll

6 ounces canned salmon - home canned is best but if not get a good quality store brand
6 ounces cream cheese - room temperature - you can use low-fat if you want but not fat-free
1/4 teaspoon liquid smoke
2 tablespoons minced onion-optional
1/2 cup chopped pecans-optional
1/2 jalapeno seeded and minced-optional

Mix until well combined then put in the refrigerator until firm. Serve with crackers. (Ritz or water crackers are my choice)

The onion, pecan and pepper are all optional. They just add a bit of crunch and a bit of heat to the dish, but if you opt out it tastes great without them too.
