Sunday Night Dinner

On Sunday's we have a tradition in our home. We have pizza and movie night. It is the one night of the week we don't sit at the table and eat together. Instead the boys get out there trays and we have pizza while watching a movie. For me it is a night to relax and a great way to start off a busy week.

Growing up we ate in front of the TV every night except on holidays. When Hubby and I got married we did the same, then when C was old enough we decided it was time to stop that and we started eating at the table. Now it is something that we do every night except on Sunday, and it is a great way to connect with each other about our day. There are times that it isn't leisurely and we are rushed and not a lot of fun, but we still sit together as a family and we have that time. As the boys get older I think it is important for us to keep doing that, to keep us connected as a family.

Last night we watched the Polar Express and we each had our favorite kind of pizza. For Hubby it is Hawaiian, C is pepperoni, K and M like cheese and for me it is either mushrooms or peppers, sometimes both.

My pizza crust is super simple and if you have 1/2 an hour to let it rise that is all you really need. Of course if you have 1 1/2 hours that is better, but it can be done quickly.

Pizza dough
Makes 1 1/2 pounds of dough (1 large pizza)
1 1/4 cup warm water
2 tablespoons olive oil
3 1/3 cup flour
1 1/2 teaspoon yeast
1 1/2 teaspoon salt
1 1/2 teaspoon sugar

Add ingredients as listed into bowl of stand mixer, using dough hook mix on low until flour is combined then turn up to medium and let knead for about 5 minutes.

Set in a warm spot and let rise for 1-1/2 hours.  I use a baking stone, then add my toppings.

Bake at 425 for 25 minutes.

This is the same recipe that I use for my focaccia, it is wonderful.
