Today is the 20th of January which means two things. One: it's the reveal date for our newest cake. Two: today is my birthday, which I think it's fitting that the cake that I voted for last month actually won :) Today is a big birthday for me - no it's not one of those that ends in a 0 it's a 5 and those almost seem bigger to me than the other. You've reached that halfway part - like you're expected to know what's going on by now. The last time that I had one of these I was still figuring so much of my life out, this time while I am still a long way from knowing what I'm doing I have a wonderful group of friends who are with me and we are all doing this together.
When the options for this month's cake came out I didn't even need to look through the book to see which one I wanted, I was set on the pound cake. Last year or maybe it was the year before that I went through recipe after recipe trying to find that perfect pound cake. I found a few that were close but nothing like the one that I was after. One can only eat so much pound cake and still fit into her favorite jeans, so I gave up on the quest and decided that I had one that was good enough - maybe I should just say I said good enough for now.
That brings us back to today. This is the pound cake that I was searching for, it is simple, easy and has everything that a pound cake should have. It has great flavor, a nice tight crumb, and almost a velvet consistency. You really need to try this cake.
It's perfect for just about any reason and I would assume it would keep well, it wasn't in our house more than 36 hours and it was gone....oops.
The recipe give you a few optional ideas and one of them is that you can sub out the milk which is only 1/4 cup for brandy, but I wasn't sure how strong the flavor would be so I opted for an 1/8th of a cup. You could just barely taste it and it gave a great flavor, but I am sure this would be perfect without it.
Go visit my baking friends and see how they liked the pound cake.
See you next month
xoxo
